Cooking tips
- Preheat the pan well and lightly oil it. Start over medium heat and first brown the surface to lock in the juices.
- Don’t overcrowd the pan; spread the meat out and stir-fry quickly. 2–3 minutes is enough.
- Add onion, scallions, carrot, and shiitake mushrooms to enhance sweetness and aroma. Add the vegetables when the meat just starts to change color.
- When the sauce reduces to a saucy consistency, lower the heat slightly and toss to give it a glossy sheen. Finish with a drop of sesame oil and a pinch of sesame seeds for extra aroma.
- Serve right over rice as a rice bowl, or soak glass noodles and cook them together to enjoy it like bulgogi hot pot.
