Springy Korean chicken thigh meat is deeply infused with a gochujang-based spicy-sweet sauce, and the more you chew, the richer the umami becomes.
Generous chunks of sweet potato, crisp cabbage, onion, and scallions gently tame the heat, and the aroma of perilla leaves stays to the last bite.
It’s fantastic mixed with rice, topped with cheese for gooey goodness, or wrapped in greens.

Cooking tips
1. After fully thawing, lightly pat dry with a paper towel. Preheat the pan well and add 1 tbsp cooking oil.
2. Add all the ingredients to the pan at once and stir-fry over high heat for 3–4 minutes to sear and build flavor.
3. Add 100 ml water in three additions while stir-frying. Keep mixing to prevent sticking, and cook a total of 12–15 minutes until the sweet potato is tender.
4. Cover with a lid for 2–3 minutes midway to steam; it will be moist and softer inside.
5. When the sauce is bubbling and reduced around the edges, lower to medium-low and leave for 1 minute to lightly caramelize. The flavor really pops.
6. Add mozzarella, Cheongyang chili, scallions, or sesame seeds to elevate the spicy-savory taste.
7. Finish with 1/2 tbsp sesame oil. For the remaining sauce, stir-fry with rice or add udon/ramen noodles for a perfect finale.
